My mom’s birthday was last Thursday, but since I didn’t get into town until late the night before and she declined cake, I made her a belated birthday breakfast instead! They’re fluffy, decadent, and loaded with sprinkles to make this the perfect birthday breakfast!

Ingredients:
2 cups all-purpose flour
2 Tbs sugar
2 tsp baking powder
1 tsp baking soda
½ tsp salt
2 cups (1 pint) low-fat buttermilk
2 eggs, beaten
¼ cup unsweetened applesauce (or vegetable oil)
¼ to ½ cup semi-sweet chocolate chips
¼ cup multi-color sprinkles
Butter or bacon grease to coat skillet
(1.) In a large bowl, stir together flour, sugar, baking powder, baking soda and salt. (2.) In a separate bowl, mix buttermilk, eggs, and applesauce. (3.) Pour into dry ingredients and stir until just combined. Don’t over-mix, you want the batter to be slightly lumpy. (4.) Fold in chocolate chips and sprinkles.
(5.) Coat a skillet with butter or bacon grease and heat over low-medium heat. Once the skillet is hot, drop ¼ cup of the batter in. Cook for 2-3 minutes or until bubble begin to form on the surface. Flip it over and cook another 1-2 minutes. Repeat until batter is gone. (6.) Store pancakes on a plate in the microwave to keep warm while the others are cooking. You can also put them in a baking dish and heat the oven to 200 degrees F (93 degrees C). Place the dish in the oven with cooked pancakes to keep warm.
Top with extra sprinkles, butter, syrup, or powdered sugar and serve!
