Tuscan Kale and Balsamic Plum Salad I get bored with eating salads pretty quickly, so I love finding new ways to transform a plain one into a zesty and hearty main course. Adding fresh plums and ricotta did just that!
Spiced Pork Chops with Cranberry Apple Chutney Do you ever feel like the meals that take the most effort are usually the best? I sure do! This meal is honestly not that complicated.. unless you don’t check the expiration of the pork chops and have to run back to the store for fresh ones ANNNND almost chop your middle finger off while prepping the ingredients! OTHER THAN THAT.. you should… Keep Reading
Spicy Buffalo Chicken and Goat Cheese Pizza Hot wings and pizza will probably be my demise, so the only logical option was for me to combine the two! A healthy dose of spiciness, bursts of flavor from the onions, and the creaminess of the goat cheese makes this my new favorite pizza recipe!
Tortilla Cups I’m really kicking myself in the ass for not doubling my recipe when I made these because we devoured them within seconds! You can fill these tasty little tortilla cups with salsa, guacamole, or taco meat so they’re great as an appetizer or the main dish!
Spicy Pineapple Chicken with Mango Avocado Salsa Sometimes having chicken for dinner just sounds so dull, so liven it up a bit with sweet and spicy fruit salsa!
Oven Roasted Turkey Meatball Sliders I’m a sucker for bite sized food! Maybe it’s the adorableness of how tiny it is, maybe it makes me feel like I ate less (even though it’s probably the same or more!), or maybe it’s the wonderful flavor packed into such tiny proportions. Whatever it may be.. these meatball sliders are a new favorite!
Oven Roasted Cinnamon and Brown Sugar Acorn Squash I have no idea why, but I used to be squeamish about squash! I gave it another shot and I love it! It makes an amazing side or main dish and has the consistency of mashed potatoes. This particular recipe is a favorite of mine because it reminds me of fall. We’re still about 8 months away from that time, but I’m… Keep Reading
Kale and Green Apple Salad with Zesty Strawberry Vinaigrette I used to loathe salads..or anything healthy for that matter, but we acquired a juicer several months ago and I love it! We’ve only used it for juicing so far, but I decided I wanted to get more use out of it. I found a simple recipe for using strawberry juice, a bit of the pulp, and balsamic vinegar to make a vinaigrette… Keep Reading
Italian Turkey Meatballs Sometimes you just want good old fashioned comfort food! Spaghetti and meatballs is a favorite of mine and I adapted this meatball recipe from the woman who makes the best ones, my mother! We’re trying to eat a bit healthier so I decided to use ground turkey instead of ground beef. The result: Just as delicious!
Spicy Garlic Cauliflower Bites I could easily eat Buffalo Wild Wings every night of the week! Now although my appetite would appreciate the over-indulging, my ass and thighs would not! So to have my wings and eat them too, I tried this vegetarian alternative! I was pleasantly surprised to find that the taste and texture was no different than boneless wings! I made mine spicy garlic flavored since that’s my… Keep Reading
Coconut Shrimp with Spicy Mango Sauce Spice up winter a bit with these delectable coconut shrimp! The mango sauce has a subtle spice and sweetness that pairs perfectly with the shrimp!
Vegetable Tortellini Soup This delicious and hearty soup is the perfect meal to warm you up on those arctic winter days!
Rosemary and Garlic Bacon Wrapped Chicken Drumsticks I made these on Thanksgiving and I’ve received multiple demanding requests since to put the recipe up already! So here you are.. delicious, melt in your mouth, bacon wrapped drumsticks! The bacon practically fuses to the chicken, so when you take a bite the bacon stays on the drumstick instead of unraveling. I apologize to my vegetarian followers, but this post is for the bacon… Keep Reading
Mediterranean Pizza with Garlic Parmesan Sauce For all of my fellow pizza lovers, here’s a new one for you to try! It’s a vegetarian pizza but I’ve also made it with chunks of cooked pancetta. The garlic Parmesan sauce is delicious and really compliments the pizza. I had some leftover so we put it on top of chicken breasts for dinner the other night and it was amazing!
Since I have several friends that are vegetarians, I decided that at least once a month I’ll be featuring a veggie-friendly dish! I made this roast acorn squash for a friend on Thanksgiving and she really enjoyed it! I fine-tuned it a bit more and even I, the steak and bacon loving carnivore that I am, found it delicious! So whether you’re a die-hard vegetarian or just looking to eat… Keep Reading
Lemon Pepper Salmon with Garlic Mushroom Sauce I love cooking salmon, but I’m always looking for different ways to cook, season, or change it. The latest way is with this amazing garlic mushroom sauce! It’s zesty and hearty and would go great with chicken or steak as well!
Hearty Jalapeño Chili For about 3 days in a row, Josh and I were consuming nothing but chili. We couldn’t help it though! It was too delicious and filling to resist! Although going on an all-chili diet is probably not the healthiest, you don’t have to feel too guilty with this recipe. I used ground beef AND ground turkey to make it a bit leaner without losing good flavor.
I love making tacos and fajitas at home, but I really wanted to kick it up a notch by making my tortillas as well. I was surprised at how simple they were to make and they taste so much better than store-bought!
