I found myself wanting to start this post off with an apology because I’ve been on a huge strawberry kick, so many of my posts lately are strawberry this or strawberry that. But hey.. ‘tis the season right? I’m not exactly sure how I went 20+ years never trying guacamole, but from the moment I did, I’ve been hooked! We’re always concocting new versions of it and I think this one might be my signature summer recipe! The sweetness from the strawberries works perfect with the heat from the jalapeños for a tasty and healthy snack that was made for summer!

Ingredients:
3 ripe avocados, peeled and pitted
Juice from half a lime
½ cup finely chopped fresh strawberries
1 jalapeño pepper finely chopped – I recommend only putting half of the pepper in at first so you can test the heat before adding the remaining half
1 garlic clove, minced
1-2 Tbs fresh cilantro, chopped
Salt and pepper to taste
In a medium sized bowl, combine avocados and lime juice and mash with a fork or potato masher until smooth.
Stir in strawberries, jalapeño, garlic, and cilantro.
Season with salt and pepper and stir until completely mixed. Serve right away or cover with plastic wrap and store in the refrigerator until ready to eat. The key to keeping it from browning is pressing the plastic wrap down to the surface of the guacamole to prevent oxidization. I bet you didn’t think you were going to get a recipe AND a science lesson today, huh?! 😉
