Believe it or not, but I had never watched The Shining until just a few weeks ago. I get numerous requests for rum cake recipes, so I was inspired to make a two layer red velvet rum cake as a tribute to the film! To up the rum factor a bit more I added Sailor Jerry Rum to the cream cheese frosting as well! I topped the whole thing off with homemade strawberry syrup for a ‘bloody’ effect!

Anyone within 5 miles of my kitchen last night had to be in total envy of the pork loin I slow cooked for 6 hours. The sweet and spicy smell has probably permeated our furniture and walls, but I’m not sad about it! Blood Orange Cinnamon Mai Tai
It seems like everyone I’ve been talking to lately has the Winter Blues. It feels like we haven’t seen the sun in weeks, the cold temperatures, snow, and ice are keeping everyone cooped up, and there’s no color outside. Anytime I get that way I look to creating recipes or drinks that involve a lot of bright colors and fresh flavors and this Blood Orange Cinnamon Mai Tai did the trick!
With blood oranges being in season, I centered my recipe around them and kept the rest of it simple. Freshly squeezed blood orange juice added punchy color and flavor and a dash of cinnamon and healthy pour of rum gave this winter tiki drink some warmth. I skipped the simple syrup since it had plenty of natural sweetness from the oranges. I also found an alternative for the almond syrup traditional Mai Tais call for, cutting out nearly all of the sugar. Cocktails can be healthy-ish right?
Pineapple Basil Sangria
Today might be the official launch of pumpkin spice everything, but I wanted to leave my summer lovers with one last cocktail to enjoy the end of the season with. A mix of fresh pineapple, lime, basil, and mint steeped in white wine and rum for several days makes for a fruity and potent summer sangria. I topped mine off with a little champagne for a nice crisp finish and of course the best part is eating all the booze soaked fruit at the end!

Every holiday season (okay, really any season) I love making sangria for all of the get togethers with friends and family. This year I threw together a quick and simple one using Red Delicious apples, pomegranate seeds, cinnamon sticks, and cloves. It’s a great make-ahead cocktail that you can do several batches and variations with. I top mine off with champagne for added crispness which makes this perfect for a New Year’s Eve celebration!

The Midwest Twister
I was 8 years old when I watched the movie Twister and became obsessed with the idea of storm chasing. I loved thunderstorms and that eerie feeling right before a tornado would hit. I remember once I was home alone and the sirens went off. I then set about the task of hauling the rabbit cage, the dog in his kennel, and our cat downstairs and setting up a stool in the shower to wait it out, but kept running upstairs to peek out the window and see what was happening. If you grew up in the Midwest, having a candle supply and toting your battery operated radio down to the basement during tornado season is just something you get used to.
We’ve only had a few tornado scares so far this year, but it sparked the idea of concocting a traditional Dark and Stormy cocktail, but with a few alterations and of course spinning it into, The Midwest Twister! I used a homemade blackberry infused rum, fresh lime juice, local honey, and topped it off with ginger beer making for a sweet, crisp, and spicy mix. I also threw in a few elements to pay homage to the film, like Aunt Meg’s yard decor and of course the infamous cow flying across their path. A few of these will definitely calm the nerves of anyone afraid of storms and at the very least make your basement wait a bit more enjoyable!
Harvest Pumpkin Beer Cocktail
When September hits, we all lose our minds over Halloween decorations, scary movie marathons, and of course PUMPKIN SPICE EVERYTHING. I fall into the hysteria just as much as the next person, but where I really go ham on pumpkin flavored goods is in the beer aisle. I love trying all the new pumpkin ales and Octoberfest beers that hit the shelves this time of year and finding new favorites, ways to bake or cook with them in fall recipes, and of course.. creating deliciously strong cocktails out of them!
This Harvest Pumpkin Beer Cocktail is simple, but offers a strong kick of spiced rum. The vanilla and caramel notes in the rum blend seamlessly with the pumpkin and spices brewed into the beer. Add a sugar and spice rim for a little sweetness and you’ve got yourself the perfect drink to celebrate the beginning of fall!
